I use a file and have the best results. Being very careful not to change the angle or remove to much metal. Then just touch ups once in a while with a small caramic stone and it seems to keep things in good shape. However I am still itching to try another knife, just not improving with the necker on those tough beaver. Maybe just me? All the above was posted before I saw your post. I sharpen mine like a wood chisel only on one side and use it with bevel side down while fleshing. This give some control if it grabs I can turn it out as opposed to using the flat side down and me holding the angle.

I use a 600,and like beetle ,use a file.The steel on a 600 is not real hard,and I like it that way.

I used to sharpen mine with a paper wheel that I use to sharpen all my knives. With the paper wheel you don't really take off any steel, but realign the cutting edge. I always sharpened both sides.
But, I found a fleshing knife I like better than my Necker 600. I bought a Caribou several years ago. I still consider the Necker 600 a decent knife. The Caribou holds it edge much longer than the Necker and doesn't need to be sharpened nearly as often.
It's been months since I bought the book, "How To Scam People On Line". It still hasn't arrived yet.

Where can you buy the 700 Necker?
I don't beleive it's made anymore....you'll have to buy used or find a dealer who has one left. I have not seen one advertised in over a year.

I use a necker 700 for beaver and it works well. I sharpen mine on one side with a stone and tough it up with a steel. Its a good knife but the zeph,caribou and MB knives are a bit better in my opinion. My necker 700 works well and I like the strong "spine". My next knife will be a sheffield. I like them better than any Ive mentioned for beaver.

Trapper7 Does the paper wheel work OK on the Fleshing Knife? I asked a guy at a professional sharpening shop about him putting an edge on my Fleshing knife for me. He didn't want to try it. Truthfully I don't think he knew what I was talking about, fleshing knife. I have wondered about those paper wheels for several years. If you watch someone use them it sure makes you think "I could do that too" then you get home its like the veg-a-matic it just doesn't work like the guy doing the demo!

beetle, the paper wheel doesn't cut into the metal like an abrasive would. It only polishes and aligns the edge.
All you need to have is a cheap bench grinder. Remove the grinding wheels and replace them with the abrasive wheel and the paper wheel. It's a pretty simple task to sharpen a knife.
With my Caribou so far, all I've had to use to sharpen it was the paper wheel. In future, I might have to use the other wheel. It really holds its edge a long time.
