… but not for long. Hot and Fast, charcoal with a couple chunks of oak on top. Sorry Cajun boy… no opossum legs here

T bones, tri tip, and Hangar steak. T bones were medium rare. Hangar steak… not quite there. Doesn’t get much better than that

I did pork chops Wednesday had 4 thick cut and 2 thin

put the thick cut on they were about an inch and a quarter thick , I would guess the thins were a half inch thick.

after the sear I moved them up to the rack and wanted them to cook a little slower , waited and it seemed like they were stalled out at 118-121 for a long time

I didn't put the thins on the grill till I though the thick ones should be near done and the thins were still done first

if I am just feeding myself I will eat a chop medium rare but cooking for gramps and grams I temp them out over 150 so they got the thin ones

some people like thick chops I like them a little thinner so they only need a couple minutes on the grill right around about 3/4" so they cook fast but don't dry out


America only has one issue, we have a Responsibility crisis and everything else stems from it.
