Just tried this receipe today and it was great.
4-6 pounds of lean deer
5 TBL Morton Tender Quick
2 TBL Brown Sugar
1 TBL Black Pepper
1 TSP Ground Paprika
1 TSP Ground Bay Leaves
1 TSP Ground Allspice
1/2 TSP Garlic Powder
Trim fat,mix spices in small bowl.Rub mixture on all sides of meat and put in a large ziplock bag. Allow to cure 5 days per inch of meat in the fridge, turning bag every day.
Place meat in a dutch oven[I used a crock pot]and add enough water to cover it.Add cabbage and carrots and bring to a boil and reduce heat to a simmer until tender[approx 4 hours].

We call this Pastrami. Try not boiling it , but smoke it for about 4 hours at about 170 if you are digital. It's awesome!
Someone gave me some last year, and I had to try it. Made 6 batches since the first of the year (some may have been road kill, don't tell) and everyone who's tried says it's the best recipe for venison they've ever tried, Kurt

the recipe sounds great.i love corned beef so i bet id like this.
