Fish, of some type, will outperform most scents for raccoons in cooler weather.
That said, most fruit paste type bait will work well even into the winter months.
Berry scents, cherry, banana , fig, peach, all good odors. Any high concentrated fruit odor.

Here's something else you can try as well.

If you know where the coon is traveling, drizzle a thin line of molasses from your trap back across his path. This gives his nose a treat that he can follow back to your trap.

Hang a piece of cob corn in the back of your trap. I like hanging my coon baits as it perks their curiosity. ...Sight attraction.

Smear a little peanut butter on the trap pan and sprinkle shelled corn into it.

Or, try all three of these.

If these don't work you may have to go to the sardines or fish oil. Will you catch a cat? Yeah. Probably. But you're using cage traps. No big deal, just turn Fluffy loose.

I like to have visual appeal as well for coons. My things is a single feather hung in the back of the cage.

My go to, cat free bait for barn jobs, etc, is Blackies Fur King and/or homemade fruit sludge from Rapberry jelly with Cherry JELLO powder and Orange Jello powder mixed in, until you can smell all 3.

I did get a dashhound once tho..........LOL (can't spell that dog breed)
