Most of the other meat on the head you can get by with not doing anything to but them ear pockets, they are thick enough to make the ears slip if they don't dry quickly.
That's what borax is for Gritty.

James. when you are skinning the carcuss, as you start skinning out the ears keep pulling and skinning. Then insert a rod under the ear and pull thru. This will peel the cartilage off the back of the ear and leave the cart on the carcuss and the inside skin that is useless.

Borax, had to do it this week on some rats. temp went from 30* to 70* over night and started mold on some rats. I put a fan on them and dusted them. Their drying good now.
