Before you go pluggin it up with stuff, think about your mechanicals. Like electrical for freezers, beer er lure fridges, 220, compressor and or hard air lines, welder, or ??? Plumbing, natural gas lines, AC, radio, location man.

A bunk area.

Skinning and fleshing area in the lean to if you trap during decent weather.

Think where you want the pressure wash areaS. Outside frost free hose bib, with inside shut off so those pesky trick n treaters can't turn it on and run away while you are not there.

The building is already built. Propane lines, 220, etc is all ready to go. I may insulate the lean to and wood fire it.

Geez USMC, sounds like you have the dream set-up already. Only think you need is an interior decorator. I'm thinking tumbler, fur drying room (if you need to regulate temp/humidity), hard to imagine actually having a space that big to turn into a fur shed. I'd love to post some pics that would help ya, but almost everything in my tiny little shed is designed around the idea that I don't have enough space (as much as I'd like anyways). Looking forward to seeing what you do to make it your space.

LOL John that was almost incriminating a reefer truck is a semi trailer. designed to freeze frozen foods. most are self contained. Although if you had a truck load of reefer you could build 3 buildings! With money to spare!

Doesn't hardly cost much extra to go up a 1/2 or full story, Knee wall, Joist' and Floor.

With the amount of room you have I would set up different areas for each process. Skinning area I would make easily cleaned. Fleshing I would permanently mount fleshing board, with platform to stand on. Then build shallow box around beam to put sawdust in to catch scrappings. Then just scoop up and burn when seasons finished. Do ez strut for drying area, line floor with cardboard to catch grease. If possible close drying area off from rest of area and put in a dehumidifier to control humidity. Now I just need the size building you have and do all I mentioned for myself!

If this is multi purpose building, I would section an area off for trapping, if straight up trapping shed probably just an area for drying, with a rack system for hanging, possibly tumbler and work table for boarding

Try not to overthink it all at once John. See how the first season goes, focus on needed equipment, how and where you want it will begin to materialize. With that size building one of the best ideas offered was a good place for full size vehicle or other transportation to back in and load/unload.
I Think you will find great pleasure in the ideas that come to mind that first season your using it, then making them happen.

Sometimes one is better off working in a small area, a big area has a tendency to collect a lot of junk. Contrats on Retiring John your the third trapper I've heard about in recent months retiring to MT.

Is my, 100% great advice. It will come together and the truck.....man, parking it in there will be great. Garage door opener is going to be needed out there first.
