Skin, gut and remove excess fat. rinse well and pat dry. Season to your taste, wrap in saran wrap and let rest in the fridge overnight. If roasting, make sure it is raised up so the grease drips off of it. If pan frying, roll in flour and corn meal. Make sure oil is 350-375 degrees and cook until olden brown. When cooked, let sit and rest for 5 minutes. While resting you and your family can decide if your ordering pizza or subs.. Now that it has cooled a bit you can toss it in the garbage without fear of melting the garbage bag from being to hot.

Since somebody wrote that they eat ticks, people have asked that we let them go on their land. that's a PETA ploy many fall into. Think it thru. Think how many ticks would be eaten by the birds, had an opossum not eaten the birds' eggs. (quail, turkey, grouse, ovenbirds, kinglets, etc, etc.) Opossum also prey on baby rabbits.

Unlike the new popular beliefs...Opossums do not go around looking for and eating ticks the come across. They groom themselves a lot and will eat the ticks off of them while doing so.

Not only do they eat ticks, they dont get rabies and are basically harmless. Harmless to what? Certainly not ground nesting birds.

They aren’t very good tick eaters cause every possum I’ve caught has ticks on it. But this is the South where everything gets ticks.
