I prefer 80% for grilled burgers and 90% lean for taco meat and spaghetti sauce and the like. You can't have fat dripping off your chin if you bite into a 90% grilled burger, thus, it ain't a burger!

You know what 80/20 is and why they dont package it in clear plastic? They package it here in PA in clear plastic, and I would say they sell a lot of it in this area.I just ate an 80-20 hamburger earlier today,lol

You know what 80/20 is and why they dont package it in clear plastic? Leave the lid off and let it cook long enough and all that moisture disappears. You're paying $5-6.00/lb for water. I worked a butcher counter when I was in high school.

I spoke to a buddy that is a butcher today. He was at my place for several hours. He said he has ribeye end trim for $6 a pound. I may swing by and pick up about 50 lbs. They are vacuum packed.

I agree, 80 percent for hamburgers and meatloaf. Leaner for stuff fried in the pan. 90 percent meatloaf would be as dry as my yard at present.

Some annelist are estimating the packers are making $1300 a stear and only owning it for 30 days . Me and the neighbor split a 1/2 of another neighbors steer recently. when we went to pay him -- i had no problem with the price because it was what we had agreed upon and was within the "norms" of the going rate for beef. My neighbor had a huge problem with the price solely on the basis that he made too much money on that steer. I don't care if he made 100% profit or 100% loss on that item. that is his business. He delivered a product to me at a price that i was willing to pay ---- both happy. My question to you is how many $ do you think it costs them to get it to the end user? Does it matter if it is one day or a year that they have to carry it? Just a hint -- I don't buy any meat at the supermarket. However there is a huge " time cost" into making my own. In 2014 fat cows were selling in the $1,70 range and choice box beef was selling around $225 to $250 a hundred . Right now the packers are paying $1.18 for fat stiers and choice box beef is selling for $350 a hundred . But there's no price fixing going on between the big 4 packer cartels . I wish it was easier to sell through the lockers but appointments are still months out when you make them here .. Your arrangement with your neighbor is a wonderful thing and should be easier to accomplish than it is . We had a locker appointment in early May that was made last August. The usda has made it very hard for a processor to get started through excessive regulation and predatory inspectors . The usda should not be involved in regulating meat for sale in state of origin . The state health dept is more than adequate.
