My favorite bait for flathead catfish in rivers is 6 to 8 inch long stone rollers. They always work better than creek chubs or sunfish for me. I have never used bullheads for flatheads. I have done very well using bullheads for bass.
Keith You ever catch channels on those stone rollers? The last several walleye ive filleted have these in their belly. Easy to catch on a piece of crawler. Ive used them for bait without any luck.

I just call them creek chubs, and while I agree they are great bait they just are not very hardy on the hook and their flesh is soft so they get pulled off the hook easily. If a big cat finds them early though they would love them.

I save all the mice I catch in the house over the winter for cat bait. Great under jugs and on pole/line.

Not sure they left here 4 years ago and living where he grew up!

That is a flathead catfish. Too bad hand fishing is illegal in so many states including this one. I'd love to give it a try, looks like a barrel of fun.
