I used to fish a lot when younger. Lived near the Ks river, and had lots of flatheads in it. Set lines and fished for the bigger ones. Biggest I ever caught was right at sixty lbs. Now I love crappie and walleyes, but big flatties rate right there with them. Before and up till Memorial Day, I would dress the big fish fresh, but after Memorial Day, I would tie them off in a spring fed stock tank, and butcher after about a week, as they get a lot of fat on them. Really helped the overall taste and was simple to do. I always turned the fish loose that weren’t at least thirty pounds, as I was after the big ones. Seen one at the bait shop one day that was supposedly 96 pounds, but I would like to have seen him on a scale! He was big, head over a foot wide. The steaks on his head were pretty nice sized! Used to use pretty good sized bullheads for bait for them on set lines, up to around three pounders if we could get them.

Catfish rules.

But I do wish we southerners had more trout. Not much I enjoy more than a fresh caught north Georgia mountain trout tucked into some aluminum foil with a pat of butter and a slice of lemon cooked over a fire. Don't tell nobody but it gives crappie a run for the money.

Oh, we got jackpike aka chain and redfin pickerel. They're fun to catch and not bad to eat but don't hold a candle to so many others like catfish and crappie.

Yellow pickerel and perch (same family) are the best eating freshwater fish bar none.

For me,like Boco, the Walleye/Perch family can't be beat....especially by catfish.

It is good but to do it right you must experience the meal. Specifically, a southern fish fry. Expect catfish fried in a seasoned cornmeal based dredge. Hushpuppies, the only cornbread we allow to have sugar. Baked beans, the good sweet ones with brown sugar and onion. Coleslaw, the good fine cut type with mayo and sweet relish and onion. Homemade fries.

Not at all. Good fish needs very little in the way of seasoning. But us southerners do like a little kick of cayenne, lol.

My dredge is not much more than qual parts meal and flour, salt and black pepper, maybe a bit of dill optional and a dash or two of cayenne.

You could replace the cayenne with a shot of Tabasco in the buttermilk marinade soak.

Well, of course I would prefer it prepared with a home style meal, which obviously I do not know how, or have fresh ingredients available. The side dishes often make or break a dining experience, for me.
Your catfish meal sounds really good Warrior.
