Whats it take to educate people that flatheads are NOT bottom feeders but predators? Blues are primarily predators also. What is the scientific name for flatheads?

Pylodictis olivaris https://en.wikipedia.org/wiki/Flathead_catfish Diet The flathead catfish prefers live prey. It is a voracious carnivore and feeds primarily on fishes, insects, annelid worms, and crustaceans. It also feeds on other small catfish and almost anything that moves and makes vibration.[12] They are known to eat crayfish, American gizzard shad (Dorosoma cepedianum), insects and larvae, channel catfish (Ictalurus punctatus), drum (Aplodinotus grunniens), other flatheads, green sunfish (Lepomis cyanellus), and carp. Insect larvae are the major prey type until an individual reaches approximately 100 mm (3.9 in) in total length, at which point the diet expands to include crayfish and small fishes. Individuals above 250 mm (9.8 in) in length feed almost exclusively on other fish.[13] Blue catfish or Ictalurus furcatus https://en.wikipedia.org/wiki/Blue_catfish Diet Blue catfish are opportunistic predators and eat any species of fish they can catch, along with crawfish, freshwater mussels, frogs, and other readily available aquatic food sources. Catching their prey becomes all the more easy if it is already wounded or dead, and blue catfish are noted for feeding beneath marauding schools of striped bass in open water in reservoirs or feeding on wounded baitfish that have been washed through dam spillways or power-generation turbines. Blue catfish are one of the only species of fish in the Mississippi river basin able to eat adult Asian Carp They also will eat zebra mussels

I used to fish a lot when younger. Lived near the Ks river, and had lots of flatheads in it. Set lines and fished for the bigger ones. Biggest I ever caught was right at sixty lbs. Now I love crappie and walleyes, but big flatties rate right there with them. Before and up till Memorial Day, I would dress the big fish fresh, but after Memorial Day, I would tie them off in a spring fed stock tank, and butcher after about a week, as they get a lot of fat on them. Really helped the overall taste and was simple to do. I always turned the fish loose that weren’t at least thirty pounds, as I was after the big ones. Seen one at the bait shop one day that was supposedly 96 pounds, but I would like to have seen him on a scale! He was big, head over a foot wide. The steaks on his head were pretty nice sized! Used to use pretty good sized bullheads for bait for them on set lines, up to around three pounders if we could get them.

The trout I like best are those little brookies I caught in creeks like was described before you could drink out of.

Maybe southerners just think those things are good to eat cause they dont have any pickerel. Oh, we got jackpike aka chain and redfin pickerel. They're fun to catch and not bad to eat but don't hold a candle to so many others like catfish and crappie.

For me,like Boco, the Walleye/Perch family can't be beat....especially by catfish.

I’d love to try fresh catfish. Gotta try it before I could judge it, but it’s likely very good. It is good but to do it right you must experience the meal. Specifically, a southern fish fry. Expect catfish fried in a seasoned cornmeal based dredge. Hushpuppies, the only cornbread we allow to have sugar. Baked beans, the good sweet ones with brown sugar and onion. Coleslaw, the good fine cut type with mayo and sweet relish and onion. Homemade fries.

Not at all. Good fish needs very little in the way of seasoning. But us southerners do like a little kick of cayenne, lol. My dredge is not much more than qual parts meal and flour, salt and black pepper, maybe a bit of dill optional and a dash or two of cayenne. You could replace the cayenne with a shot of Tabasco in the buttermilk marinade soak.

Well, of course I would prefer it prepared with a home style meal, which obviously I do not know how, or have fresh ingredients available. The side dishes often make or break a dining experience, for me. Your catfish meal sounds really good Warrior.
