What are some good recipes besides the whole bacon wrapped deal ?

Wife used to put dove breast in a deep dish with cream of mushroom soup plus veggies and made something like a pot pie. I think it is the best way we have had dove.

Slow moist heat is the best.

Dove and pigeon are some of the best tasting game there is. I like to keep it simple and enjoy the flavor. I de-bone the breasts and fry them in butter for a few seconds on hot cast iron. IMO, not much that's tastier than that.

Two breast halves off the breast bone. There isn’t much to them. A few seconds on each side to brown them is all it takes. Like any wild game, there is very little fat, you can’t overcook them or they will be dry and tough.

I eat all of my meat pretty rare, I’ve had steak tartare and years ago we used to eat what we called cannibal burgers; raw burger, raw onions and Limburger cheese on a bun. The burger was from butchers we knew. I haven’t caught anything yet and I’ve been doing it for a long time.

We do squirrel pot pie and or dove potpie bake it in a glass cake pan and put biscuits on the top. Yummy

I eat a lot of wild pigeons here and have eaten a ton of doves over the years. Cut the backbone out and break the breastbone so they are flat. Then BBQ them hot and fast. I use a soy sauce/rosemary/mustard marinade but only for about 20 minutes.

Pretty hard to beat. The legs are great so I always pick them. The bird deserves to be eaten whole.

The more you cook wild meat or any meat for that matter the tougher it gets. I cook my Steaks about a minute on each side or less then it is done!!!


God please keep they 19 fallen UBB miners out of trouble up there.
