I was given a chunk of mountain lion back strap a couple years ago (thank you Tray). I came across it in the freezer a couple days ago and decided to make it Sunday dinner. I need to know how to cook it up. I'm thinking of just grilling it like a pork chop unless someone has other ideas. I've never had lion before and don't want to ruin it.

The one time I ate lion it was cooked up in what I guess I would call Stroganoff. It was excellent! We don't get to cook many of those over here.

I would chicken fry just like deer backstrap. The old mountain men(trappers)
probably hung it on a stick over fire and declared it was one of the best.

I've roasted them in a baking dish in the oven with rosemary, like you would do a pork roast. It tends to be pretty dry so don't overcook. Keep it simple, don't bread it or mess it up with all sorts of concoctions, it's not necessary.

Don't know anything about lion but even beef starts get a little off taste after a year in the freezer to me. Pork has even a shorter life in freezer.

It can get real dry if overcooked, but it need to be cooked thoroughly like pork. They can also carry trich.

I have ate bobcat, lynx and mt. lion. I always just rolled it in flour and fried it. No egg, maybe some salt and pepper. I would rather eat it than venison.

I'd cut it into steaks like you would deer backstrap and fry it up. It is really good, but drier than pork. Lion makes a good roast, but I would never waste a backstrap by roasting or grilling it when you can make those delicious steaks out of it. That goes for deer and elk also, far prefer steak to a backstrap cooked up whole, and doing that to tenderloin is blasphemy.

Floured, breaded, or just seasoned and tossed in the pan, cook it however you prefer your other wild game steak.

Lion is one of those animals I'd hunt routinely just to make sure I always had some on hand to fry or grill up . I love it ! Just wish I had access to it.

I ended up just breading it lightly with seasoned flour and buttermilk and fried in homemade butter in a cast iron pan. It turned out pretty good! I would definitely eat it again if given the chance. Thanks for all the suggestions.

I never have tried it, but had a friend get a big one this past weekend. He sent me the pictures would have had a lot of back straps on that lion. Guys I know, get them here but never asked them about what they do with the meat.
