Cam went out today with his grandpa killed a few more. However we had killed some that were probably grandpa's age! Have any of you guys place them in a pressure cooker before frying them up?? If so how long did you cook them and at what pressure?? Also did you leave them whole or cut them up?? I've never pressurer them to help tenderize the older squirrels we just boiled off and made into dumpling, but dad wants to have a squirrel fry like they use to have when he was young and invite a few folks over, and I rather not break teeth or pull out dentures when people are trying to eat them.

Yes, I pressure cook them for 20 min, take them out and fry. Or make dumplings out of them. Dang good and tender.

We have soaked them in milk overnight before frying. They come out nice and tender then.

I like to brown them just a bit in a skillet with butter. Then cook them in a tomato puree with chopped tomato chopped onion salt pepper garlic basil and oregano. Add a little water. Simmer them till the meat is falling off and the tomato is thick.

Unless I have one that is obviously small and a young squirrel, they all go in the pressure cooker. 15 pounds for 30 minutes.

pressure cook for an hour, roll in flour and brown in a skillet. can't beat them.

The best squirrel recepe ever, no question!!!
2-3 squirrels boiled, take meat off the bone, put back in pan and continue to boil, and add a small slice of cured ham chopped or some bacon, add some rice, a couple cans of beans, kidney,black or red or all three, add a couple green peppers chopped, 3-4 jalapeno peppers chopped couple onions chopped ,salt and pepper I like to add a little sage as well keep boiling till it thickens and everything is done. Yummy!!!
Okay, it's really good, but there probably a few recipes, that will rival it. Lol

I put the squirrels in a basket thing that I have that has legs on it. It keeps the squirrels off of the bottom of the pressure cooker, so they don’t stick. I put water in just to the bottom of the basket. I suppose it’s an inch and a half of water. I don’t like the squirrels being in water while I am cooking them. When I am done I boil the water down some and make gravy.

Flour salt and pepper , brown in skillet and pressure cook for 25 to 30 minutes if you’re doing a mess . They are like eating chicken thighs nice and tender

Separate the pieces first.Then,,,Ten minutes in InstaPot on high(pressure cook),,with beef stock for liquid.Let cool then batter and fry.Or,,when done in the Insta Pot,,,you can pull meat off bones and use in Squirrel Pot Pie,,or Stew or whatever you want.Same with Rabbit.

Salem I make a limb chicken gumbo out of them. Couple three squirrels cut up and generally Zatteran gumbo mix served over rice. I’ve made jumbalya out of them too. Nate’s version don’t sound bad either.

Three or four squirrels in a pot with a couple large carrots one large onion a couple three stalks of celery a few cloves of garlic some peppercorns three or four bay leaves maybe a sprig of thyme if you got it. Enough water to cover. Bring to a boil then simmer until falling off the bone, an hour or so.

Pick meat from bones and strain the stock. Make up some pie crust dough, roll it out and cut into strips aka dumplings. Heat stock to boil add dumplings thicken with a little flour or cornstarch add back meat.

Not as good as mama's but that's how I do it.

I suspect ol Clay Creech eats more squirrels than about anyone I know. I think he also uses the pressure cooker method,well at least his wife Cindy does.

I have always slow cooked my squirrels in slow cookers. When available I would do grouse and squirrel together with onions, carrots, spuds and some homemade seasoning. Veggies went in at about half time.

My ex mother in law would gripe at me when I shot squirrels. I usually made head shots with a 22. She liked eating the head best. Brain, cheeks and tongue. she grew up in rural MO.

A lot of people around here will fight you for the brains, I've never have had it dad has, he said it's too much work for the reward... he said they were good just a lot of work for the little amount of meat

Went to a friend house in northeast Mo to squirrel hunt. His wife asked me were I shoot squirrel. Told her I hunt with 22 and shoot them in head. She asked me to shoot them somewhere else because she loves brains. So I shot everyone in the heart lung area. She ate every brain and was tickled. I watched her and decided it was not my cup of tea.

Never tried squirrel brains,,but any time we roast a whole pig around here,,when the pigs done on the spit,,we crack open the head and eat the brains.Tastes like smoked salmon to me.Great on a cracker!! My Grandmother used to like chicken brains.

Grandma always browned them then went in a roasting pan in the oven for several hours. Was always falling off the bone. I remember 2 old boys from my younger days that did not want head shots on them. Now with grandpa only head shots were ok.

… the poster was interested in pressure cooking squirrels prior to frying to make them tender … we answered that .. but since it’s turned into a various recipe thread I’ll pit in the squirrel and deer sausage gumbo which is what I like to do with them

… the trinity

.. chopped garlic

… savoys brand dark roux ( use recipe on jar for quantities)

…equal parts deer sausage and squirrel (pressure cooked & meat picked off bone)

.. brown deer sausage in large stock pot and remove

… cook down trinity and garlic in sausage grease for about 7 minutes

.. add water… stir in roux while bringing to a boil

… boil 30 minutes

… add in sausage, squirrel and Tony’s or two step seasoning then simmer 45 minutes

.. serve over or under rice

There is a recipe for fried chicken that you boil in milk for a few minutes, bread, and then fry it. The trick is to not over cook it so it falls off the bone but just enough to make it the tender you want.

I use the instant pot for LOTS of things, including squirrels. That being said it will also do amazing things for round steak or any other "tougher" meats.
