I like to brown them just a bit in a skillet with butter. Then cook them in a tomato puree with chopped tomato chopped onion salt pepper garlic basil and oregano. Add a little water. Simmer them till the meat is falling off and the tomato is thick.

The best squirrel recepe ever, no question!!! 2-3 squirrels boiled, take meat off the bone, put back in pan and continue to boil, and add a small slice of cured ham chopped or some bacon, add some rice, a couple cans of beans, kidney,black or red or all three, add a couple green peppers chopped, 3-4 jalapeno peppers chopped couple onions chopped ,salt and pepper I like to add a little sage as well keep boiling till it thickens and everything is done. Yummy!!! Okay, it's really good, but there probably a few recipes, that will rival it. Lol

You pressure cookers... What do you use for liquid in pressure cooker or if any? I put the squirrels in a basket thing that I have that has legs on it. It keeps the squirrels off of the bottom of the pressure cooker, so they don’t stick. I put water in just to the bottom of the basket. I suppose it’s an inch and a half of water. I don’t like the squirrels being in water while I am cooking them. When I am done I boil the water down some and make gravy.

Cam went out today with his grandpa killed a few more. However we had killed some that were probably grandpa's age! Have any of you guys place them in a pressure cooker before frying them up?? If so how long did you cook them and at what pressure?? Also did you leave them whole or cut them up?? I've never pressurer them to help tenderize the older squirrels we just boiled off and made into dumpling, but dad wants to have a squirrel fry like they use to have when he was young and invite a few folks over, and I rather not break teeth or pull out dentures when people are trying to eat them. Flour salt and pepper , brown in skillet and pressure cook for 25 to 30 minutes if you’re doing a mess . They are like eating chicken thighs nice and tender

Separate the pieces first.Then,,,Ten minutes in InstaPot on high(pressure cook),,with beef stock for liquid.Let cool then batter and fry.Or,,when done in the Insta Pot,,,you can pull meat off bones and use in Squirrel Pot Pie,,or Stew or whatever you want.Same with Rabbit.
