Doing an outreach event/fur sewing class for the ladies in March and planning to service some furbearer dishes (beaver, bobcat etc) and looking for some Bobcat recipe ideas.

We can't trap or hunt bobcat here, so it will also be my first time preparing it, so feel free to share some tips, tricks or info.

Make sure you skin it right away. I did that to one and made meat ball with the quarters and grilled the loins. It was amazing, a lot like pork. Then I caught one in the morning, and had it in my truck all day. It was really cold so there was no risk of it spoiling. Got home and skinned it and decided to cut the loins off for some friends to charge. Still had the same texture as pork, but tasted like a litter box. Only one of my buddies ate more than one bite, but he also just finished up with COVID and couldn't taste anything haha

If traps work like the Antis say......I would have no fingers.

I have cooked and ate bobcat, lynx and Mt Lion. It all tasted the same to me. I always just floured and fried it. I had an adult tom that was strong once like ctn speaks about. Out of what has been listed, I would choose la2wd54's first by far.

We have smoked front or rear quarters. Mostly fry or grill the loins with whatever favorite seasoning.

Another method that works well is to double wrap quarters tight in foil with butter and favorite seasoning and put on grill or in the oven until done. Cut off the bone and serve.

Good eats!

so, I just made some and server it, it went over great!!!, so I took it and put a dry rub on it and let it sit in fridge for 48 hours, then grilled it for 4 hours indirect heat. then pulled it like pulled pork, severed on a bun, no bbq sauce.
