I left it on overnight and it snowed a little. The moisture in the air mustve cause the pellets to stick to the sides because i went out this morning to it shut off. A good bark had formed but the meat was 60 degrees. Im assuming from past experience it was around 145ish based on how many pellets were gone and the appearance. Is this salvageable or will I be rolling the dice if I try to continue this?

It may be finished. But one question unless you’re eating it for breakfast why not put it on early in the morning? With my pit boss at 250 5-6 hours depending on size they fall apart.
But like mentioned fire it back up . If it snowed it was just like putting left overs in fridge. You could just put it in foil and stick in oven . It already has the flavor you are wanting

I read all the time on the internet how long pork butts take on the smoker and i havent found it to be true for me in 2 years of owning this thing. Numerous times ive put butts on at 6 am and i end up pushing 300 degrees by 4 pm to get them done for supper. I have a smaller, higher end pit boss. Im jinxed.

The smaller smokers seem to cook faster than the big boys. I have a recteq RT 140 and it always cooks faster than what the recipes predict. Thats why its always a good idea to have a probe running .

I have a pit boss leave it on the smoke mode(160)degrees for 4hrs then raise the temp to 225.using a probe to get internal temp to around 180.wrap put in a cooler for couple hours then slice and eat.

Never used a probe. Never use a measuring spoon or cup . You take if off and slice it. If not done enough for you throw it in the oven
