Lotta guys say a lektrik knife wastes too much meat and insist on a manual knife. My problem is hanging onto the slippery little buggers. I may pull the skin off, let them air dry, and try that.

I have both but 9 times out of 10 i'll grab the knife knife. in fact I have not touched the electric one in about two years I think. Having said that, I use a Deba mostly.
Once I have the filets , I use a Yanagiba for further cleaning up ( thats the long skinny one of the two.

I have a farm pond grossly overpopulated with 6" crappie. I'm thinning them out and decided to clean 32 the other day. Didn't end up with much. That's why I'm considering peeling the skin off and let them air dry awhile and stiffen up a bit, then filet them

you loose less if you don't skin
scale , you can scale fast also makes the fillettes hold better cooking also

Hand fillet for me. Tried electric and it works well. I just like filleting by hand. And yes I regularly do 50 lake Erie perch or more every morning. Crappie our limit is 25. And for my limit of 6 walleye I can have them fillet by the time it would take me to pull out the electric knife and insert the blades. I'm also a skinner not a scaler

I'm spoiled. I use an electric knife, the metal frame from an ironing board, 2 buckets and a garden hose. On 2 or 3 fish you wouldn't notice much difference but when you have 30 or 40 to knock out that set up is smokin fast.
A bronc rider from Dodge City showed me that trick 25 yeare ago and I won't wander too far b/c it works so well.

The minute a fish is landed we cut the throat and bleed it in a bucket of water. After a few are caught we take those and put them in a cooler full of crushed ice, change water in the bucket ready for the next batch of fish. At the end of the day we clean the fish on a stainless counter that just fits the pickup tailgate. Have a electric outlet on the trucks tool box for the electric knife and a clean water tank made from a piece of plastic pipe. The water tank has a hose and is pressurized by the air compressor in the tool box. The fish are filleted, fillets put in a stainless bowl, washed with clean water and ice, bagged and put on ice for the trip home. When you get home you are done, no fish to clean or mess to deal with.
