Looks excellent. Ours will be completely ready in a couple more weeks. Robbed a plant the other day and had some nice taters. My ground is like concrete right now so Im gonna wait until we get a rain before I get any more dug

Warm humid to cure then cool dry to store.

What variety? Since they're all in a row I assume a bunch type. I like bunch types. I grew out a few rows of centennial one year, never again, centennial sets down roots where ever a node touches dirt and they got eight to ten foot vines. I ended up digging up half my garden to harvest all those roots, lol. Big crop, lots of digging. I much prefer to find the roots right where I put them not all over.

I'm partial to Covington and Mahan/Bradshaw.

These came from an Amish greenhouse and were labeled "Sweet Potatoes" so it's anybody guess.

I'm not Gary but I dig by hand. Roots at that stage are soft and fragile. If I need to loosen I'll use a fork off to the side to get under and lift them. Alot of how easy to dig is in how you prep the bed to set out slips.

Irish potatoes grow up sweet potatoes grow down. So I raise up a bed well above the natural grade for sweet potatoes.

I used a potato fork. Gently. It was a very soft ridge.
These are sweet potatoes. Yams come from a store in a tin can.

Can keep the deer off of them. Eat the vines to the ground. Surprisingly, when I did grow them, never had a hog bother sweet taters

Might be good that way,BUT cooked ,backed,or crockpoted,then butter, and honey, or maple syrup is better!!!
