midlander trapper M Joined: Nov 2012 Posts: 1,538 midland, michigan	For the crunchiest batter hands down.... 1 cup Drakes 1 cup rice flour 1Tbs baking powder Additional seasoning of your choice; cajun, salt, pepper, lemon pepper etc ...whatever floats your boat Ice cold beer...and I mean ICE COLD. The baking powder reacts with the carbonation in the beer and creates a very light and very crispy breading. I mix it a little thinner than pancake batter so its not too thick. I dust filets with drakes very lightly, then into the beer batter, then hit the oil at 375. The key is the rice flour and baking powder. I get a lot of requests for this recipe. Almost forgot, the other key is quality fish such as walleye, perch or bluegill. Catfish will ruin the best of any recipes

I like this one, I just use flour and beer , and it turns out good, but I like the adds , as it gives it more fluff to the batter. We have met the enemy and the enemy is us!

America only has one issue, we have a Responsibility crisis and everything else stems from it.
