Warm front in VA this weekend. Giving the does a break with the bow and figured I’d take advantage to dial in my smoked turkey breast for next month.

Brined in salt and brown sugar last night, rubbed with garlic and olive oil this morning. 225F over hickory for 4 hours. Pulled at 160F middle of the breast temp, finished at 166F after resting for 15 min.

First bite, wifey said “do that again next month”! I’d have to concur. Folks in the office gonna eat good tomorrow so we don’t get burnt out on leftovers.

I smoked 3 chuck roasts and a brisket today. They are, currently, resting. Nice looking hunk of meat there, GUNNLEG!

Sure looks good. Don’t change a thing. Maybe smoke 2-3 at once. They freeze well.
