I don’t think I’ve ever had oyster soup but I do love them! Clam chowder rocks. Except once I swallowed a piece of shell and it scraped me and I was in misery for a week

Just to clarify . . . it's Oyster Stew, not soup :-)

I'll personally go through 10 > 15 bushels from late Nov > Feb. Fix them every way imaginable and then freeze some for frying during summer :-))))

Crappiekiller just google Noah Ark clam chowder recipe. Easier than me typing it out. If you have trouble finding it let me know and I will type it. Been a long time ago and I do not remember onions in recipe but may have been in it.

As long as the seafood isn’t over cooked I love both, heard that Fareway had oysters for 30 dollars a pound, if that’s true I think I can buy fresh hand shucked ones cheaper.

If there is a crustacean or shell fish I won't like I haven't found it yet and these cooler evenings are making soups, stews, and chowders sound great!

Love both but clams aren't readily available here so no recipe frown.

Oyster stew is a gulf coast thing here as anyone who knows oysters knows the fresher the better. A really simple stew where subtlety is the key for amazing flavor. Saute finely diced shallots or mild onions in a little bit of butter, maybe a small bit of flour browned lightly if you want it thicker, add oysters and a bit of liquor just until they barely start to curl on the edge then your sweet milk or cream heated to a simmer.

Having grown up within reach of the Gulf I wholeheartedly agree. Overcooking seafood should be a crime.

I'll just offer one of my fav's for a late breakfast / lunch . . . FRESH sautéed Oysters, w / onions, in a little heavy cream, chopped bacon bits, dash of bell peppers, on a Thomas English Muffin (Bagels don't work well) and seasoned to your liking :-)

I like both New England and Manhattan Clam Chowder and Oyster Stew. At least I always heard it called Stew and not soup, is there a difference?
