For those that process their own venison, what are you using for a smoker to put up summer sausage/sticks/wieners? I’ve always used a ‘homemade’ electric smoke box. I say homemade but it was homemade with commercial electronic controls and I’ve always got commercial results. However, the brain box took a puke and I no long have easy access to commercial grade equipment.

I’m thinking about a large pellet grill but open to suggestions.

I like to run more at a time but the minimum batch is 25#. Who’s running what? And what’s your results?

I've used a master built electric smoker with excellent results on snack sticks.never tried summer sausage should turn out just as good just take longer.

I just slip on my speedo and put the summer sausages on my pellet grill. I prefer them not stuffed in casings, for more smoke flavor.

Pellet grill smokin bros. summer sausage come out great. Can put twenty or twenty five 2lb sticks in at a time…just don’t place over the space between drip pan and burning box… will get burnt if you do..

I use a Pit Boss and it has 5 racks so I typically do 25# per batch. And it has a low temp of 150

I use my homemade smoke house. Control the heat by opening the door. The way meat was smoked 100 years ago.

I use a masterbuilt electric smoker, but would really like to build a small smokehouse.

Danny, be careful with it in the oven. If that fat starts to render it will make a mess. Thats how I ended up buying my masterbuilt!

My smoker is an ugly home built thing made from a old stainless catering box. I used side burner off gas grill for heating my chips make my smoke. I mostly cold smoke and I built it to be that way. I finish some items in the oven or by boiling.
Most sausage and stick I make in 25 lb batches I can load that much. Depending on what I'm smoking it can take more baby sitting than a commercial built smoker. So I can't always load it up and walk away the chips don't self load. Over my life time I've used everything from little electric Outers smoker. The old gutted refrigerator and an old oven as smoke box and a Weber kettle. When I was in highschool I used dry stacked cement blocks tin top and plywood door. I have never used the pellets and only rarely bought chips.
So what is it you want? And expect from your smoker?? How much do you want to spend?
If you expect to load it set the temperature and run time go drink beer. Then you probably should be looking at some type of commercial smoker. With controls to do that.
I've been told I'm a pretty good cook. I've never been a baker or candy maker to technical for me.
So again what do you expect to do your self? and want from your smoker??

Tastes good. was gifted a Hi Mountain kit. Hi Mountain says its not shelf stable.

Anybody got a shelf stable recipe?

I would look at an Auber PID controller just wire that to the heating element, I have one on my masterbuilt electric , I can set 6 different times and temp and it will automatically step up to each temp and times.If you got a good smoker I would stick with it .

This isnt summer sausage - but I do a lot of it in my Smoke Hollow two burner propane smoker. I dont think they make them anymore, unfortunately. Would easily do 25 lbs

Neighbor converted an old outhouse, worked pretty good.

I’ve been debating between a dedicated smoker vs a pellet grill. I’m leaning towards a pellet grill for more versatility. Been looking at the Tragger 885. I like the idea of WiFi monitoring and being able to program the temperature schedule. The concern I’ve got with the grill option is if it’s able to throw enough smoke.

You can always get more smoke the real problem with pellet grills and smoking sausage is most you can't get the low temps needed for a great end product, You can do smoking in a pellet grill but it's not optimal that's why i have a pellet grill and a smoker.

Mine has a setting just for smoking and you can change the P setting thing for more or less smoke if you want to.
