So what do they put into cheese to make it high temp cheese? It sure makes a mess of a frying pan.

I've used regular cheese and high temp cheeses. I just use regular cheese now and have no problems. I like it better

High temp cheese is just dehydrated cheese.
Water is good for two things, Floating Ships and making Beer.

I it is mostly a moisture content
the drier the cheese the less it melts
Bread Cheese: Juustoleipä! is an example of a very low moisture cheese , that you bake or fry and serve
America only has one issue, we have a Responsibility crisis and everything else stems from it.
