So what do they put into cheese to make it high temp cheese? It sure makes a mess of a frying pan.

According to the great Google. They just heat up the milk during the curdling process and that makes it tougher, denser and drier.

cheese makes a mess no matter what kind it is when it's melted.

I'm not sure what they do to make it high temperature?? Sure does make a difference when we use it in sausage or weiners.

I agree it makes a difference, but I am not sure it is one I care for.

the milk is cooked to a higher temp before the curds form so it tempers the resulting cheese1

Nothing cuts baked on cheese, grease and other food like dog tongue.

I've used regular cheese and high temp cheeses. I just use regular cheese now and have no problems. I like it better

High temp cheese is just dehydrated cheese.

I it is mostly a moisture content

the drier the cheese the less it melts

Bread Cheese: Juustoleipä! is an example of a very low moisture cheese , that you bake or fry and serve
