I love homemade bread at home but still prefer Sara Lee sammich bread in my lunch. Much easier to eat driving down the road.

No, she is drying and freezing it to ship across country. It ships better dry and froze then fresh. She grinds it back into what looks like flour in the food processer and ships it.

Back in the day when I designed for the food and beverage industry, I set up a packaging unit for 50 and 100lb bags. I think their customers were smaller bakeries that were not set up for bulk deliveries.

At the time, and maybe even today flour mill outputs were measured in "CWT" or hundred weights.
