I used to make a lot of deer jerky but it’s been several years and I can’t find my marinade recipe. What are everyone’s favorite marinades or spices. I plan on making both sliced and ground jerky. Thanks in advance.

Another vote for Hi mountain here. Lot less mess than all the liquid marinades and turns out a great final product. I make tons of goose jerky every year with it. Cracked pepper and garlic is my favorite but inferno is a crowd pleaser too
Gotta live up to the nickname...

I start with soy
4 parts soy to 1 part worstishire sauce then red pepper flake to your level of spicy and a dab of liquid smoke
marinade in a zipper bag in a bowl air squeeed out
then dehidrator
you can add onion and garlic powder also or most any other ground spice you like
but that is a good base to start with
America only has one issue, we have a Responsibility crisis and everything else stems from it.

4# deer - I use ground 1/2 C Soy Sauce 1/2 C Worcestershire Sauce 2 TBSP Liquid Smoke 2 TBSP Seasoning Salt 2 TBSP onion powder 2 tsp Spice Time BBQ seasoning - Walmart carries it 2 tsp garlic powder 2 tsp black pepper Seems like with that volume of meat, that's akin to adding dressing to a big bowl of salad. Then again maybe it's black magik that works for the sacrilege of ground jerky

Here is the recipe I used for last batch I made. Not sure where I got this recipe?? Probably from someone here on trapperman being wrote down not printed out. I do make variations of this. Mostly I left out a lot of the red pepper as my family is not into the really hot. But I also switch out brown sugar with my homemade maple syrup. Just Worcestershire or just Soy or both. Way I look at it when changing things around. Don't really ruin it just makes it different. If I like something I do it again. If I don't like something much I just don't make it again. My son and his buddies can handle hot. So last time I made 3 different batches all different amounts of pepper. The boy got the hottest. I did this recipe last time with liquid smoke. Then just dried it in my warming oven. You can leave out the liquid smoke or not and dry it in the smoker if you have one. I have done it that way too. Mac
