When you feed your sourdough start to keep it going do you just dump the extra? I tried something today that turned out real good. I fed my start last night and left it on the counter. This morning I put a start back in the fridge. Then I chopped up some pepperoni and mixed it, some parmesan cheese, a little garlic salt and the sourdough (about a cup and a half) in a bowl. I put a little olive oil in the frying pan and spread the dough mixture thin and fried it until golden brown on both sides.

It was so delicious I will be making it regularly in the future. It's very quick and easy. Give it a try - you'll like it. Now does anyone have any sourdough recipes besides the normal bread, pancakes and waffles they care to share?

I discard! I use the discard to make chocolate chip cookies, pizza dough, muffins, granola bars, crackers and also follow the "unloaf" method sometimes if I don't feel like doing all the work of a traditional loaf.

there are lots of discard recipes

my youngest often makes pancakes if they aren't making bread that day.

they have also made cookies and all sorts of other stuff.


America only has one issue, we have a Responsibility crisis and everything else stems from it.

Barnhurst.......you didn't quit trapping and go into baking due to my earlier post today...........I know I should have kept my mouth shut..........look......just stick with the trapping........with hard work and perseverance you'll get up to my level I'm sure.......or at least close to it........almost forgot.......we don't have groundhog with the striped face here in Ohio.......

Yes, we made all different kinds of crackers for several years with our discard.

My wife never throws the discard out. She always makes something with it. Crackers, pancake, the other day she rolled it out thing, put it in a cast iron fry pan and filled it with eggs and cooked sausage and baked it. Why throw it out?

while still warm rip hunks of it off ,and dip in a shallow dish of a nice olive oil , balsamic vinegar and pinch of coarse salt
looks great.
