I can’t really be much different than Beaver and I love Beaver. I don’t know why voice text is capitalizing Beaver. grin

That was on the tv news the other night , you might have to put an add on Craigslist, you have a commercial kitchen at your place.

Beaver, muskrat and woodchucks are great. I'd definitely eat nutria given the chance

You notice that they managed to find a nutria in clear water to make it appear like a clean rodent. I'm not sure I've ever seen a nute in clean water before.

No, I think that would tend to make folks not want to partake of nutria...me included probably.

I'm excited to try muskrat as well, though the review are way more mixed than the beaver reviews.

Like Carl, I don't think nutrias look all that appetizing when I see where I catch them. Usually the water is muddy and downright stinky.

I do like muskrat meat. I like to take the hind quarters and soak them in italian salad dressing in the fridge over night, then cook them on the grill the next day.

Might be a side effect of being raised in a world where nearly every food product is chock-a-block full of preservatives and other such chemicals, but I'm less than bothered by a bit of muddy water. Guess I figure a bit of mud and gunk can't be worse for me, and it doesn't really effect the meat anyways unless you're eating carp or something.

I've tried nutria at it is a rather bland meat but because of this you can flavor it how you want it to taste.

If they are so bland than why can't I get the stink off my hands when I skin one? Eating one, no thank you!

When in doubt that is the safest way to try new meats.

I like to take a tender cut, either a backstrap or a tenderloin, and cook that up with salt to kind of get the flavor of the meat. After that I can crackpot it but I vary my spice blends depending on how the meat tasted.

I've eaten and like both muskrat and beaver. We eat something new on New Year's Day. We were going to try nutria, which Beaverpeeler was going to kindly give me, but my brother in law, who was hosting that year, was to grossed out to try it.

Recently my border collie puppy preferred the one lone nutria carcass out there over a pile of beaver ones. For whatever that info is worth.
