mskrtman trapper M Joined: Dec 2011 Mn	I like to braise the shanks or the neck roast. All the collagen melts and you have juicy flavorful meat that can be eaten as is or shredded to make pulled venison barbecued sandwiches or tacos or chile etc.

I don’t think round steak has enough connective tissue to make the most of braising. Braising shanks gives a velvet finish that’s addictive. www.rtssetter.com
