I like to braise the shanks or the neck roast. All the collagen melts and you have juicy flavorful meat that can be eaten as is or shredded to make pulled venison barbecued sandwiches or tacos or chile etc.

I had some of my canned venison yesterday as hot sandwich. Will eat the rest of the jar for noon today. Is almost same as hot beef, for sure don't suck.

This! I don’t think round steak has enough connective tissue to make the most of braising.

Braising shanks gives a velvet finish that’s addictive.

Venison and moose are the two types of meat I enjoy more than beef. Haven't had good venison in a couple years, need to find a good oppurtunity to go on a hunt.
