I'm getting close. My daughter made us a couple loaves, one plain and the other cheddar/jalapeño. It makes awesome grilled cheese, or grilled ham egg and cheese sandwiches.
I didn't understand the the feed/discard thing at first, but may be ready to try it.
I made some cinnamon raisin (yeast) bread a couple weeks ago. Start to finish is only 4 hours, sourdough takes a bit longer it seems.

And how do you get the swirls, is that from bottom of bowl or something?

Do you use the no knead technique?

I do 3 sets of stretch and folds ...then let it rest ..until it doubles in size

I upped the water...to 74 % ...and that gave me a thinner crust.

A lot easier to slice.

Last one was a couple days ago, used more rye and extra water, came out with less than a hard crust, and a more moist interior. still good but I think I'll use less rye flour next time....still getting the feel for it.

I deboned and smoked a turkey breast today, would make nice sandwiches on that pickle bread Nessy. It looks good.

You don't need much rye...to get that flavor .
