InterNet says cellar too cold or in cellar too long . I think the ones we just ate that are sweet were just taken out of the cellar that day .What if I take some out for 8 days would that reduce the sweet taste ? Or will they remain sweet till they are worthless .I go through this every year but can not remember the outcome .Uck taters are not ment to be sweet . They did not freeze !

Colder temps turn starch into sugar, no going back. Store them some place warmer.

So if I store them in a dark closet for a few weeks they will still be sweet ?

G , if you warn them up before you eat them the sugar will turn back to starch, I've done it. Cellar can't be colder than 36f

Removing water from Carbs turns them into sugar also, maybe getting a little dehydrated.

Sweet potatoes can be placed in a 90° room for about a week to improve sweetness. Tobacco barns were frequently used to “cure” sweet potatoes.

when you eat them they are gonna convert to sugars anyway. Its the nature of the beast
