I use suckers and rehouse to make ours. I really like it. I sometimes put jalapeno in mine too.

I’ve made something similar several times. Hank Shaw has a recipe online I use, layered red onion just like yours. I absolutely love how it turns out. Such a good use of that bony belly meat too, any pike under 32ish” and the bones will dissolve in the brine in the first day. Pike r great eating, I can prepare back straps next to walleye and fool anybody any day smile

I use the In Fisherman recipe. It is very similar to yours
I also use a recipe in one of the local church cookbooks that uses white wine.

That looks great!

I just had some pickled northern my buddy made. They use the recipe with white wine as well. I like it way better than pickled herring.

Pickled fish must have some kind of time bending properties. You open the jar and poof, you look up a second or two later, the whole jar and a box of beer have disappeared.

I have been thinking about making some pickled fish for a few weeks now. I guess it is almost that time again. Once I get our banquet behind us I think I will get started on it.
