Savell that a pretty good lunch it’s even better with some cheese in a can spread on top of the crackers then the HHC layed on top good and healthy

That looks like good head cheese, not much gelatin and a lot of meat, I prefer mine on a saltine maybe some onion the Tabasco is a good addition when I’m looking for some heat.

I have tried that “old folks” brand. Not my favorite, but it’s all I can find anywhere. I like to find some old country store that has a big bowl of it and have them cut off a pound or so of it. My dad always added the feet trimmings to his.

I agree with Zim and Jtrap, replace the triscuits with Ritz garlic butter or roasted vegetable and personally Id leave the Head Cheese at the store and get a good cheese spread instead. Weyauwega, Merkts or really anything else comes to mind. I suppose you eat rice cakes too?
I have had head cheese before as my Mom made it, can't say I've missed it in the last 35 or so years.
