The advantage to having a cross-draw is you can draw with either hand . So , say , your mount goes down and breaks/pins your dominant , and the crazed animal is thrashing around . You can still unholster relatively easy.

I call my pellet grill a smoker, I can smoke in it too.
I set on smoke until it's 100 degrees and then set it wide open, open the grates and give it a good searing.

Savell - That fire is the beginning of some good grub.

I have experienced the real Texas. Yes, my mother is a Yankee transplant. She is now a good Texan. .

Back in 1998 i learned to cook real Q from an 85 year old black man in Knox City, Texas. I was hunting in the Panhandle. On many subsequent visits i have learned more from experts. It all begins with the wood. I have used Mesquite, but prefer red oak or wild cherry. REAL wood, not pellets, shavings, or scraps. I ordered and had shipped to Ohio an offset box BBQ. I cook great brisket, pork tenderloin, and turkey breast. I can control the smoke ring by using more or less dry wood to burn or just coals.
