Those are some nice fish!! Are the top and bottom ones some kind of white bass? The middle one looks like a catfish or burbot

The middle one is an eel tailed catfish and the other 2 are golden perch or yellowbelly as we call them out here

I have never eaten a catfish but they are supposed to be really good.
The yellowbelly are pretty good though

The catfish around here are delicious! Probably my favorite tasting fish.

Around where I am it is mainly yellow belly and catfish. Some other species in this area include (top to bottom) Murray cod
Cooper creek catfish,
Spangled perch, silver perch,
Carp and bony bream

In the colder areas in the mountains along the east coast we also get: brown , rainbow and brook trout, Redfin perch, which are related to the yellow perch that you have over there I think, and freshwater eels. We also have Australian bass, but I have never caught one [Linked Image]

In the tropical areas up north we also get Saratoga, coal grunters, sooty grunters and barramundi [Linked Image]

Out of the fish I've caught: (I only have pictures of the rainbow)
Rainbow trout:
[Linked Image]
Brook trout, brown trout, channel catfish, flathead catfish, largemouth bass, smallmouth bass, white bass, yellow perch, brown bullhead, sheepshead, bluegill, crappie, sucker, rainbow darter (which look like this!) [Linked Image]
and I think that's about it for fish that I've ever caught

whoops forgot about walleye and a musky (which might actually be a tiger musky which is a cross between a nothern pike and a musky):
