Turn the scissors over, pointy side down on the egg and they will open right up.
The shells are not that hard but the membrane inside is thicker than chicken eggs.

OK, I learned something new today! Another thing interesting enough that I have to learn more about!

Anything I should feed them to help with egg health and the like past the regular laying feed they get ?

I would just feed a 16% to 17% protein chicken layer mash or crumble, from now on, except when they go into molt. They will come out of molt more quickly if you bump them up to a 24% to 28% gamebird or range bird feeds while they are replacing their feathers.

They enjoy bits of edible plants and insects, but they are unnecessary when feeding a balanced ration.

Depending on your area, your wife can make more at home working than many jobs out of the house. There's a lot of money to be made selling hatching eggs, chicks and adult quail. She could do other small animals and plants and make low 6 figures in sales fairly easily, if you have the population to sell to in your area and if she's willing to work hard like you do.

You're welcome Donovan. They don't need grit because it's in the bagged ration. In most blends of mash you can actually see the little bits of oyster shell. In crumbles and pellets the grit is fused in and harder to see.
