Always. I save most veggie and chicken scraps in gallon bags and freeze them. Once I have 3 or more I simmer (do not boil) down to a savory stock.

I love making stock from the ham bone.
Then I either make split pea soup or bean and bacon soup with it

I once made fish stock from a bunch of snowy grouper carcasses. I have boiled shrimp shells to make stock.

O yeah do it all the time . Will pick up one of the rotisserie chickens from where ever at the end of the days when there about to oss them for like $1 toss it in the pot till all the meat falls off then toss the bones and cartilage back in.
Beats the tar outta anything else.

Gotta guy on the boat who will make gumbo and boil a whole chicken to cook it for the gumbo.... Then toss out all the water he used used to boil the chicken then use boxed broth......makes no sense to me imo

We've made all kinds of stock... Mom even made stock out of chicken feet which was different. Didn't care for that stuff very much

Like others I save carcasses from chickens until I get enough for one big boil. Usually make 4 gallons at a time. We then freeze it in pint and quart jars for use.

Mom would save all cut off from vegetables. Carrot tops, onion skins etc... and freeze them. When she had enough saved up, out they'd come to make a vegetable stock

She would then can all stocks to save on freezer space
