Do any of you have any less common types of cheese you like to eat?

I like most of the types of cheese I have had and wonder if there is anything good, that I've never had, that I should try.

There is a Limburger cheese spread that is phenomenal. It’s diluted a bit with a white cheddar but it still has that stinky kick to it. Straight Limburger is tough to do. Bought it once and my beagle at the time stopped dead in his tracks walking through the hallway. He didn’t know what to think of that smell!

Only cheese I like and eat is mozzarella that’s it even on my tacos.

I eat a lot of cobyjack, provolone, Gouda, Wife would add blue cheese to the list.

less common I miss read that as common.

Havarti, and goat cheese, Muenster, bree are more the wife likes.

Not much cheese I don't like.

Feta on anything greek, blue cheese, but my favorite is old fashioned red rind and black rind hoop cheese.

Keith, I don't know which cheese this was but it is a real funny story:

I was traveling on a train from Bordeaux to Paris and on one of the stops an elderly blind lady boarded into our car with a seeing eye german shepard. After a little while a guy pulled a baguette out of a satchel and unwrapped a slab of some kind of putrid smelling cheese. Well, the ol' gal sniffed the air a bit with a frown and then takes her cane and whacks the crap out of the dog! LOL About the funniest thing I ever saw.


My fear of moving stairs is escalating!

Gouda is excellent, and Havarti. GOOD Brie is also very tasty.

Mild or medium brick. Aged is getting into Limburger lite category.

BTW, have also been told Limburger continues to age over time. Fresh is pretty good and different than letting it sit around a year or so. Once it gets that far it goes into Sonny's super sticky catfish bait.

Haven't found one I don't like yet. I do like the spicy cheeses. Gotta have a good melty cheese for French onion soup

Hard to find the fancier cheeses here in the state because import rules makes it difficult to get fermented cheeses from overseas here so we're limited to more "fresh" cheeses.

Our state convention isn't too far from Amish county this year. Need to make a stop at the big cheese shop there.
