Warrior I was in agreement with all you said on the cornbread making. But you can have that mixture of cornbread and buttermilk. I can do regular milk.Down here it was biscuits or cornbread at every meal.I like it with a bowl of mustard greens best.

Clabbered milk is what the older folks called buttermilk.

Lots of folks I know prefer sweet milk to clabber.

Once had a yank ask me just what sweet milk is, lol.

Mostly cornbread here because mama didn't grow up with flour in the house as her mama was allergic to flour. My granny, dad's side, though could do anything with flour her biscuits were to die for and her dinner rolls were the stuff of dreams.

Can't have beans or greens without cornbread.

Oh, the same yank didn't know what light bread was either. And he thought I said light funny.

Drive to NC. Get on I40. Get off at exit 319 and visit a joint called the redneck bbq lab. Thats what cornbread is supposed to be like.

My local bbq joint serves up bbq and brunswick stew with a wedge of crackling bread. Brunswick was new to me when I moved to Georgia as it ain't a Bama thing but its grown on me and I do love a good Brunswick stew. The bbq is good but it ain't Bama cue.

I find the last sentence in violation of trapperman code 4:19

… for it is written… the only real bbq is from Texas

That don't work on us and you know it. You texicans owe your existence to us Alabama and Tennessee folks. Just say thank you and move on.

BTW you got bbq from us and you done gone and changed it all up. Y'all did good but you forgot the first rule of bbq. BBQ is pork.

It always struck me as odd that southerners think they are the final authority on cornbread. I grew up in very rural northern NY, far from any city cornbread or Johnny cake as it was called, was and still is a staple in many rural homes. And yes we make it with sugar. And it is delicious.

The recipe on the Albers yellow corn meal comes very close to the Johnny cake I grew up on and is delicious.

When we lived in Alaska, half our church was transplants from the south. Potlucks always had several pans of cornbread. Our pan of sweet cornbread was always empty when the potluck was over. I can eat the cornbread without sugar but if given a choice I’ll take the sweet cornbread.

Trail cameras and fresh snow have broke a lot of trapper’s hearts.

This isn’t very fair. I wanna be the authority on something regional. Let’s see: cookie tables at weddings, pickled eggs and beets, chipped ham??
