Tasted it and back sweetened it over a month ago, dang stuff took off working again. Hope to taste it tomorrow and see if needs more honey. Heat was just right then

That sounds good. I've never heard of habanero mead before. Do you ferment the peppers with the honey or add them later?

I like pepper jelly. Diane makes a good habanero cheesecake.

Peppers went in with the honey and stayed in for two weeks.

3 pounds of honey, I used wild flower
Two peppers cut in half
Add water in the fermenter till your happy with the head space. Should be close to a gallon.
Add the yeast, I used 71-B
Let go till it stops working, then rack off the yeast cake and peppers
Add a quart of pineapple Juice and sweeten to taste ( mine started up again so I let go till it stopped)
Going rack it tomorrow and see if needs more honey. If it takes off again I'll pasteuriz it

Thanks cotton. I have a gallon of honey I got for making mead. So I need to get some peppers and pineapple.

I racked the mead and it went dry again eek
Added more pineapple and honey till the said that's really good, will let it sit a week to see if it works again.
The heat is there but not my face melting hot.

It looks good anyway. From what I have seen of making beer, you can't rush it. You are better to let it work.

I've made mead many times.
I bottle it in champagne bottles. If you don't stop fermentation yourself it tends to wake up on its own and commence to working again. The champagne bottles keep it from blowing and it's usually effervescent when opened.
Usually takes two years till the flavor mellows out.
Haven't made a batch in probably 15 years now. Never made a "flavored" one though.
I love heat and your habanero pineapple sounds great.

That pineapple juice needs a week or more to clear , if it starts working again I will pasteurize it.
