foxkidd44 OP trapper Joined: Jun 2007 Illinois	Got into work today and the boss said that we were getting an elk coming in. I’ve never messed with elk meat before.. The meat was already deboned when it came in.. I was amazed at how big the back straps were. Stand by your principles, Stand by your guns, and victory complete and permanent is sure at last. Big Sam trapper B Joined: Aug 2012 Blackduck Minnesota	I butchered for a few years and I remember occasionally getting surprised with a critter I'd never cut up before. I cut up on onyx from Texas once and the guy that brought it in only wanted the steaks from it. Some of the best burgers I ever had.
