Just opened some pickled cukes. I'd trade for one those every year.

Yes, halibut and salmon. I like the halibut better. It's addicting. I add pearl onions and carrot slices.

I have access to a lot of bluegill and crappie fillets so that is what I use. I’ve only ever had northern. Been wondering about catfish. Have you ever tried pickling Flathead belly’s Jayme? Seems like a good texture for it.

Pike and bass are what I prefer. I tried it with trout once, and didn't care for the taste. This past summer fishing the river I was catching all kinds of smallmouth. I was wondering if they would be any good smoked. Anybody try smoking them? I've smoked larger northern pike and they are good, just wondered about smallmouth?
