I’ve been stocking the freezer with pheasants again, it’s that time of year. I discovered two cockbirds that I had left over from last season. They were vacuum-sealed and only had a little freezer burn on them so I decided to use them up.

My granddaughter cutting the meat off the bones.

The pheasant pieces are coated with seasoned flour, browned in oil and arranged in a single layer in a greased baking dish.

Getting all misty-eyed over chopping the onions.

Chopping the bacon.

Mixing the sliced mushrooms, chopped onions and chopped bacon together.

The mushrooms, onions and bacon are layered over the browned pheasant pieces.

Sour cream thinned with mushroom juice is poured over the top.

Baked covered at 350° for an hour and 15 minutes.

It’s pretty good, a family favorite.
