I’ve been stocking the freezer with pheasants again, it’s that time of year. I discovered two cockbirds that I had left over from last season. They were vacuum-sealed and only had a little freezer burn on them so I decided to use them up.

My granddaughter cutting the meat off the bones.

The pheasant pieces are coated with seasoned flour, browned in oil and arranged in a single layer in a greased baking dish.

Getting all misty-eyed over chopping the onions.

Chopping the bacon.

Mixing the sliced mushrooms, chopped onions and chopped bacon together.

The mushrooms, onions and bacon are layered over the browned pheasant pieces.

Sour cream thinned with mushroom juice is poured over the top.

Baked covered at 350° for an hour and 15 minutes.

It’s pretty good, a family favorite.

Good work, Lugnut. I was taught early how to cook, and we showed our children how to prepare family meals early on. They now have almost no desire for fast foods or prepared foods. They would rather spend a little time with basic ingredients and seasonings to create a meal, are not intimidated with knife work,and will work through recipes without hardly blinking.

Same here Mike, my children all helped from a young age.

My granddaughter has been helping with meal prep since she was small enough to need a chair to work at the table.

Our top three things we most enjoy doing together are trapping (she’s been my trapping partner and skinner for about eight years now), cooking and fishing.

We’ve been wading the local rivers for years.

I tried to get her into hunting and still do but she’s just not passionate about it like she is about trapping, fishing and cooking.

This morning we are going to kill and butcher an annoying rooster and make chicken/corn/noodle soup out of it.

I have said it before Lugnut, you are a good man and have done well teaching your grandchildren the value and joy of the outdoor lifestyle.

You should get that young lady some sweet vadalia onions next time to cut up so they won't be so harsh on the tear ducts. smile

Today’s project; I told her we’d be starting this one from scratch then mimicked a chicken scratching in the dirt. That got a head shake out of her.

Thirty minutes in the pressure cooker at 10 psi with about four cups of chicken stock.

While that was cooking she did the knife work with the veggies; spring onions, carrots, celery.

One shredded rooster.

Added some frozen corn and boiled the veggies about 45 minutes until they were tender. Added a bag of egg noodles in the last five minutes, turned the heat off and dumped the shredded rooster in.

Yep sweet Vadalia onions are far less harsh to work up and mightly sweet in your cooking meals. Yellow and white onions will make any grown man cry a little. smile

I’ve used sweet onions before, just not sure if were the Vadalia variety. I’ll see if they sell them locally.
