To make tender before frying. I have some in the fridge and need to cook a new way to keep from getting old.

NATURE is not having the same planing I am today.. Just got to hunting area could have shot 3 but the oldest boy was heading off to hunt deer in the back of the woods so I waited no hurry I will be here tell dark. Then the rain started and seems set in. Squirrels vanished. I expect toh boy to be soaked to the skin by now and not staying tell dark.

So im in the truck thinking about cooking Squirrels hopefully the rain stops and I can pick up a few and the boy smokes another deer. even if its a bust im not at work so its a win

I pressure cook them at 10 psi for 20 minutes. That usually has the meat falling off the bone. Then I brown them.

I've heard something about installing other rodents but not squirrels and it didn't sound like something I'd enjoy.

I tried this for the first time this weekend. I had some old tough cat squirrels quartered up. I have a farberware pressure cooker and put it on the bean/lentil setting which was 35 minutes. Let cool down for about 15 minutes and release pressure on its own. Took out, threw it in a bowl of buttermilk, rolled it in flour. Turned out great. Tender as can be. Some of the best eating there is.

Thanks I will give it a try . Dang auto correct. insta-pot. The electric pressure cooker thing tahrs ben sitting in the counter for months. but not been getting used.

Surprised you didn't mention a trip to New Zealand for a tahr hunt. Are they tough as squirrels?

Just fry the young ones. I use crockpot for old or fox squirrels
Can of cream of chicken or cream of mushroom soup. Half stick butter. Put on before going to work on low delicious by supper time. Salt or pepper to taste. If making dumplings I use cream of chicken. Turn it on high when you get home add dumplings and good to go after shower and chores.

that's the way my mamaw always done it. softened up the crispiness of the breading. My papaw didn't have any teeth so that might have been the reason. All i know is that it is fine eating when done that way

Dude, the same, only different.

I have found that most small game is really well done in a pressure cooker for 20 minutes, scraped off of the bones, shredded, browned, served with gravy over biscuits, egg noodles, or rice. Rice being my least favorite…..
