I don't grind anything, or saw anything....critter is boned out, then cut into meal size chunks, froze and finish cutting before cooking....I prefer stew over chop-meat so all odd and ends gets cut up for that.

I cut on a plastic Costco table, and use sheet pans or large bowls to hold the parts and then hold the wrapped portions for moving to the freezer.....

I used to vacuum pack, but it finally gave up the ghost, and new ones had such bad reviews...I package in freezer zip locks, press all the air out that I can, and pack the packages in 2.5 gallon zip bags...that seems to maintain the meat pretty good.

thanks for the tips ,i will try some. for wrapping freezer meat wrap the meat in plastic wrap then freezer wrap it will stay good for years.
