Pork country style ribs
Smoked pork jowl bacon in the peas
Smoked pork neckbones in the greens
Bacon grease and pork cracklings in the cornbread
Only thing missing is the baked sweet potatoes but lard could just as easily be swapped in for greasing them up.

Cooked a big cast iron pot of Kraut, home grown taters, onions, cubed up pork loin with some brown sugar for flavoring and to tamp down the tart kraut a bit. Eating it again today.

Thanks for the heads up Savell. I forgot all about it. My wife whose job it is to tale care of that flew back to Southern Illinois yesterday to take care of her mom and dad/so I am going to have to get creative.
There is a stale half of cabbage in the fridge and I have some Vienna sausage which likely has some pork in it, probably gonads.
There should be some dried beans in the pantry that I can pick through for some back-eyed peas.
If I don't get food poisoning from this adventure, that would be my Good Luck for 2026.
No luck with the dried beans in the pantry, but I did find a can of re-fried beans. Score!

Everybody who tried the bobcat liked it. It was almost totally consumed. There was 23 of us this year, which is about average. To name some meats, so far on New Year's Day we have eaten beaver, muskrat, iguana, python, rattlesnake, alligator, bison, venison, goat, camel, alpaca, kangaroo, cuttlefish ink, all sorts of fish, abalone, partridge, guinea, quail, pheasant, goose and more. We have been doing this for over 30 years. The rule is the main course has to be some meat most of us haven't eaten before. It's getting hard to find new meats. I would like to get some mountain lion and bear sometime.
