Old dude my dad knew would cage trap them and put them in a pen and feed them cut up sweet potatoes for a week to purge them out. I tried it once or twice and it wasn't bad. Believe that he prepared it like a slow roast with onions, carrots and potatoes.

Had it several times, each cooked in different way, too greasy and did NOT like it.

Never ate one, but if I was to try....I'd parboil to get excess fat off, then slow braise with onions and whatever....AFTER it was caged and fed for a bit....

This fall a guy found a possum dead by the cabin. He found it by the crows and ravens in the trees. He took a picture of it. I called him on it because I never seen a possum that far north. 30 miles south of lake Superior. He went back and took another picture three days later. Not much stays lying on the the ground uneaten for three or four days, up there in the woods ?

I'd put it in a pot like squirrels, with some brown gravy and let it stew all day.
Over rice, I'd try it.

I tend to avoid things the cats won't touch. Cats would clean the bones on beaver and muskrat. They would not touch the possum or coons. To many worms and nasty stuff in them for me to volunteer to eat them. I hope i dont see time so hard that I would.

I'd sooner eat a possum as a coon.

I had a guy tell me he ate a himalayan possum, found "himalayan" in the middle of the road.

What to avoid is the loose green fecal matter that squirts out when you skin the possum.

Cajun boy you would be better off to peel your possums cube them up and let them sour a bit then put a piece on a hook for trot-lining snappers or blue cats
that would give you some top-notch table fare

With just a big pull I have the back straps exposed

330 Trapper and I tried brown bear once, "out of curiosity". One bite for each of us was enough to satisfy our curiosity.

We use to eat possum when I was a kid. Baked possum and cornbread is pretty good. They'd put them in a cage for 10 or 12 days and feed them vegetables to "clean them out". Most would scald them like ye do a hog.
