It's called an Ancient grain...along with Einkorn...buckwheat ..and others.

Spelt flour adds some nutty and sweet flavors ...and rises real good too.

Also easier on the digestive system too..

Its just added to the Bread flour in small amounts. ( 15 - 20 % )

So if your making an 800 grain loaf..

Put 120 - 160 grams of spelt in your bucket...then add bread flour to reach a total

Of 800 grams
