Nessmuck, what does the spelt flour accomplish? I'm fairly ignorant to bread making, but I'm good at eating it.

Slice of that (i call the end pieces) with some of your beef stew on top. Making me hungry tonight! and it was meatloaf might..lol

It's called an Ancient grain...along with Einkorn...buckwheat ..and others.

Spelt flour adds some nutty and sweet flavors ...and rises real good too.

Also easier on the digestive system too..

Its just added to the Bread flour in small amounts. ( 15 - 20 % )

So if your making an 800 grain loaf..

Put 120 - 160 grams of spelt in your bucket...then add bread flour to reach a total

Of 800 grams
